Soil Vineyard located in Valle del Salnés in the Rías Baixas, which are cultivated on a pergola system and located in different areas within a radius of abut ten kilometres, and close to the sea.
Winemaking All the grape harvesting is done by hand; selecting bunches within the vineyard itself. Transportation to the winery is immediate, in small boxes of perforated plastic, so that the grape arrives whole and in an optimum condition for wine-making. Later the grape juice is taken to stainless steel vats where the process of fermentation begins.
Aging Aging on lees in stainless steel vats for 5 months.

Pazo Señoráns, now converted into a winery, is a magnificent example of those XVI century ancestral Galician houses built in the countryside with all the charm and dignity of days gone by.

The winery launched its first vintage in 1989.

The Pazo and the winery owned originally by husband and wife Marisol Bueno and Javier Mareque (and now in the hands of their four children Marisol, Vicky, Javier and Santiago) began producing wine in 1989, although the estate had already started growing wine-grapes.

The origin of the name Pazo Señoráns is unknown: we do not know whether it was the place that gave the Pazo its name or whether the Pazo gave its name to the place.

Philosophy
They work to create wines that faithfully reflect the land which gave them birth.

They sincerely believe in their potential, from young wines to the capacity for growth which this variety has over time.

Soil and vineyards
The whole vineyard has Albariño grapes which are cultivated on a pergola system and located in different areas within a radius of about ten kilometers, and close to the sea.

The lie of the land is not uneven but it is quite unusual because most of the soils contain xabre, a type of subsoil that results from the decomposition of granitic rock and which has great drainage capacity.

The environmental climatic conditions combined with the variety of soil types (poor, acidic, and loose sandy soils) provide the grapes with their individual, fresh, aromatic character.

Grape harvest
