Soil | Produced in Barcelos on the Cávado Sub-Region from vines in the Cotovia single vineyard. Here the soil is granitic, with medium grain and an average altitude of 85m and comes from their oldest vines planted in the early 1990’s. The vineyard is around 1ha with single downward cordons and a low yeld. The grape production is certified as “Integrated Production” (EU environmentally friendly practices). |
Winemaking | The grapes are hand harvested to small boxes. The bunches are partially destemmed. 5% skin fermentation. French oak fermentation and staging for 9 months. Batonnage for 6 months. No animal products were used in winemaking. Suitable for a vegan diet. No chemical tartaric stabilization. Subject to deposit (tartrate crystals). |
