Soil | Produced in Barcelos on the Cávado Sub-Region from vines in the Cotovia single vineyard. Here the soil is granitic, with medium grain and an average altitude of 85m and comes from their oldest vines planted in the early 1990’s. The vineyard is around 1ha with single downward cordons and a low yeld. The grape production is certified as “Integrated Production” (EU environmentally friendly practices). |
Winemaking | The grapes are hand harvested, destemmed, and part of them are submitted to pellicular maceration. Both grape varieties are fermented separately and are blended in December with their original lees. After being decanted the must is fermented in stainless steel at low temperature with “batonnage” and lees staging for 5 months until bottling. After decanting, the must is fermented in stainless steel vats at low temperatures, leaving the wine on its fine lees with stirring (batonnage) until bottling preparation. |
