Soil	Zafirah seeks to trace back the ancient traditions of the red wines produced in the Monção region. These wines are already described in the charter attributed by D. Afonso III to the village of Monção (1286). Several historical records mention that Monção red wine was sent to England during the 14th, 15th and 16th centuries, serving as a substitute for the famous Burgundy wines.
Winemaking	Grapes harvested manually in small boxes, with selection in the vineyard, only bunches in perfect ripeness and sanitary conditions are harvested. Totally destemmed. 48 hours of pre-fermentation maceration followed by direct pressing. No tanning. Fermentation in stainless steel (1/3) and used French oak barrels (2/3). Handcrafted wine, “carried to the lap” throughout its process, without haste or hurdles, respecting its own will with minimal oenological interventions that respect the character of the wine.

The vineyards are located in Riba de Mouro and Tangil at the top of the municipality of Monção — northern area of Portugal. It is a handmade wine with minimal oenological interventions with the production of 1000 bottles, labeled and numbered manually.

Zafirah is a handmade wine, "carried in the lap" in all its process, without rush or tramway respecting its own will with minimal, surgical and respectful enological interventions of the character of the wine.
