Winemaking The grapes are selected and picked by hand. Vinification maintains a balance between winegrowing traditions and new technologies, knowledge and trends. During alcoholic fermentation the must undergoes battonage until the producer and oenologist consider it sufficient. Herdade do Cebolal is located on the Costa Alentejana, at the southern end of the demarcated region of the Peninsula Setúbal, near the village of Vale das Éguas, about 17 kilometers from Santiago do Cacém and 10 kilometers from the Atlantic.

The estate has been in the family for over a century. The vineyards of the estate are situated on the Costa Alentejana, ten kilometers from the sea.

The mild climate with sunny days and cool nights influences the maturation of the grapes and the soil rich in shale and limestone gives it unique characteristics. Work on the vineyard has been very careful with minimal irrigation, looking for quality grapes. The defoliation in the area of the bunches for a better sun exposure south / west guarantees a suitable maturation.
