Winemaking The grapes were destemmed into a vat, anaerobic conditions were created. These remained in these conditions for 10 days, after which they were pressed in a vertical press. Finished fermentation in stainless steel vats where it aged for about 3 months.

Harmonizations Pizzas, Chinese and Japanese food, grilled fatty fish and grilled meats.

This is a project by two winemaking friends, Daniel Miranda and João Meireles, which aims to explore different types of winemaking. The mentality and philosophy change over time and all the wines in the Rebuscado line will mirror the evolution of the two as Winemakers.
