Winemaking | The winemaking philosophy is focused on seeking the expression of the terroir of Serra da Estrela. As such, no oenological product was used except for very low doses of sulphur. The alcoholic fermentation took place naturally with the indigenous yeasts in the wine press. Little extraction was sought, working by "infusion" in search of the elegance and finesse characteristic of the region. The fermentation temperature was regulated with ice bags and the cold of the mountain nights. The wine was then transferred to used barrels, where it underwent malolactic fermentation until the following spring and aged for 18 months. Bottling took place in August 2019. It then aged in bottle for a further 2 years and was released to the market 4 years after the harvest. |
