Soil Located on the Alentejo coast, in the extreme south of the Península de Setúbal demarcated region, next to the village of Vale das Éguas and about 17 km from Santiago do Cacém – Alentejo Coast.
This vineyard is about 80 years old and is called Rossio because it is one of the oldest vines in Herdade do Cebolal.
Winemaking The grapes are selected and picked by hand. Vinification maintains a balance between winegrowing traditions and new technologies, knowledge and trends. This white must was in contact with the skins for 5 days. Alcoholic fermentation was carried out with indigenous yeasts. During the alcoholic fermentation, the must undergo battonage until the producer and oenologist consider it sufficient.
This white wine was aged in vat for 24 months, being able to carry out naturally the malolactic fermentation due to the low sulphur content and by being in contact with the fine lees and some thick lees.
Aging 24 months in stainless steel vats.

Herdade do Cebolal is located on the Costa Alentejana, at the southern end of the demarcated region of the Peninsula Setúbal, near the village of Vale das Éguas, about 17 kilometers from Santiago do Cacém and 10 kilometers from the Atlantic.

The estate has been in the family for over a century. The vineyards of the estate are situated on the Costa Alentejana, ten kilometers from the sea.

The mild climate with sunny days and cool nights influences the maturation of the grapes and the soil rich in shale and limestone gives it unique characteristics. Work on the vineyard has been very careful with minimal irrigation, looking for quality grapes. The defoliation in the area of the bunches for a better sun exposure south / west guarantees a suitable maturation.
