Sparkling wine and sushi can be a challenge and especially if you want to choose a single wine to pair with the entire meal. Sushi is a very delicate food, and the variety of fish served in a meal could be vast. Usually raw, it can be served with seaweed, vinegar rice or inside tofu balls. On the other hand, the saltiness of the soy sauce and the spiciness of ginger, wasabi and daikon horseradish add an extra, contrasting layer of flavour.
In red wine, grapes are harvested, crushed, and fermented with the skins in a tank or vat. The contact with the skins distinguishes the production of red wine from white wine. The skins provide colour, flavour and tannins, and the yeast added in the fermentation process will transform the sugar into alcohol.
Pétillant Naturel, commonly called Pét Nat, is an ancestrale and natural method of making sparkling wine where the wine has bottled before the first and unique fermentation is complete. This process leads to the formation of carbon dioxide from the natural sugars present in the wine and then transforms it into the characteristic bubbles of these wines. Therefore, it is not a wine style but rather a vinification process.
Simplistically, we can say that organic wine is a certified product according to organic standards defined by law. Strict compliance with these requirements, which have been in force in EU countries since 2012, encompasses all the stages inherent in wine production, from the treatment of the vineyard to vinification and the consequent use of oenological products, up to labelling.

Their very vegetal flavour enhanced by chlorophyll clashes with the wine leaving a bitter, metallic taste in the mouth. Don't be discouraged. It is perfectly possible to choose the right wine to match asparagus.
