Cabernet Franc probably originated in the Basque Country - where northern Spain and south-western France meet along the coast of the Bay of Biscay. It settled in the Bordeaux region in the 17th century and is one of the three main red varieties and the oldest of the Bordeaux region. The grape reaches its best expression and potential in St. Emilion and Pomerol, but it was the Loire Valley that popularised it during the 1600s, where it is known as Breton. In Bordeaux, the right bank regions maintain the highest concentration of Cabernet Franc plantings, where the variety is used as a grape blend with Merlot. Cabernet Franc is also planted on the left bank along with Cabernet Sauvignon because when blended, it produces remarkably complex and elegant wines, as each grape variety complements the other. The fame of this grape variety is partly because it originated the Cabernet Sauvignon grape variety after being crossed with Sauvignon Blanc. Although historically used in the great Bordeaux blends, one can now find several single varietals. Today it is planted in many wine regions around the world and is one of the 20 most popular varieties to such an extent that there is an International Cabernet Day. These deep coloured grapes originate medium-bodied red wines, fresh, with moderate tannins and high acidity. Wines made from 100% Cabernet Franc are delicate and aromatic, with aromas of red fruits such as raspberry and strawberry, earthy and herbaceous notes, delicate floral notes, mainly violets, and spicy notes. With evolution they may acquire other aromas such as liquorice, cocoa or tobacco. It is a very versatile wine to pair with a wide variety of dishes due to its smooth tannins and refreshing acidity: rich grilled vegetables, mushroom dishes, game birds, stews, Italian tomato-based dishes are some examples. The salty and herbaceous profile, in combination with the red fruits, makes Cabernet Franc a delicious and attractive grape.
