Winemaking The grapes from previously selected plots, transported in 22 kg boxes, were subjected to rigorous sorting at the entrance to the cellar. After destemming and pressing, the must was transferred to a stainless steel vat where it was kept at a temperature of 8ºC for 48 hours until decanting. After the beginning of alcoholic fermentation in a vat, the wine was transferred to French oak barrels, where it carried out alcoholic fermentation, with controlled temperatures of 15º C for a period of 30 days.
Aging 9 months in French oak barrels, with bâtonage on fine lees.

Perescuma Estate
Perescuma Estate has an exceptional and differentiating terroir for the Alentejo region: soils are composed of 4 different profiles of complexity and unique identity: calcareous, non-rich Loam and Clay Limestone.

Located in Vendinha, municipality of Évora, Perescuma Estate has 543 hectares, Located in Vendinha, municipality of Évora, Perescuma Estate has 543 hectares, of which 37.9 hectares are vineyards. First vineyards were planted in 1996. Currently, the waxing is mostly red varieties: Alicante Bouschet, Touriga Nacional, Syrah, Cabernet Sauvignon, Touriga Franca and Souzão. White varieties were recently planted: 6 ha of Verdelho, Viosinho, and Sauvignon Blanc. Endorsed with drip irrigation and planted according to strict criteria of modern technology, the vineyard is permanently monitored to ensure qualitative optimization to excel in wine production.

In addition to wine production, Perescuma Estates pursues several agricultural activities such as livestock, olive grove and pine, and cork forest.

Zambujal do Conde Estate
Distancing only 8 km from the historic city centre of Évora, Zambujal do Conde Estate has an overall area of 512 hectares, of which 8.1 are vineyards. A slope vineyard of singular beauty, planted in 2006 with an altitude of 237m and frank soils – sandy with high granite influence. The vineyard of Zambujal do Conde consists mostly of red varieties. Touriga Nacional, Alicante Bouschet, Syrah, Petit Verdot, Cabernet Sauvignon and a single white grape variety, Verdelho. In addition to the vineyard, Zambujal do Conde Estate develops various activities, such as livestock and traditional olive grove.

They are committed to sustainable viticulture through the use of innovative intervention practices that lead to the conservation of natural resources and ensure that their vineyards integrate a bio-diversified environment. They are aware that a balanced natural environment, together with a diversified agro-ecosystem, improves the production and quality of their grapes and, consequently, their wines. They aim to maximize the potential of their terroirs, promoting the necessary conditions for the preservation and continuity of all of their differentiating factors.

Manuel Lobo
Head Winemaker & Managing Partner
Graduated in oenology from UTAD Manuel descends from a family with tradition in viticulture dating back over 200 years. At the beginning of his career, Manuel worked for bespoke companies in Bordeaux (France), Clare valley (Australia) and Napa Valley (USA). Currently, in addition to managing and being the head winemaker of LVW and Perescuma, Manuel is the head winemaker of recognized wineries in the Douro and Tejp region. Manuel's wines achieved great notoriety worldwide, with over 190 wines ranked above 90 points and with over 30 wines ranked above 95 points in the well-known Wine Spectator magazine and Robert Parker Wine Advocate. Manuel was elected Portuguese winemaker of the Year 2020 by Grandes Escolhas magazine.
