Soito Wines was created in 2013 by two teachers – José Carlos and Sandra Soares – passionate about Dão wine who one day decided to start an adventure to produce unique wines, with character that mirrored their passion for wine. The project started in Quinta do Soito where they live with their family.

Despite being recent, Soito Wines is already recognized in the wine market in Portugal, namely for having won important national and international awards, being considered one of the iconic producers in its region, Dão.

The best grape varieties of the Dão. region are produced here: Touriga Nacional, Tinta Roriz, Alfrocheiro, Jaén, Encruzado and Malvasia-Fina.

Quinta do Soito
It is in a rustic and bucolic landscape that we invite you to discover Quinta do Soito, located between Serra da Estrela and Serra do Caramulo. With approximately 10 hectares, including 7 vineyards, it is located in the village of Tibalde, city of Mangualde, district of Viseu.

Quinta do Cabeço da Roda
With approximately 6.5 hectares of vineyards, Quinta do Cabeço da Roda is located in the village of Mesquitela, city of Mangualde, district of Viseu. The predominant grape varieties of this vineyard are Touriga Nacional and Encruzado and the grapes harvested here are of unparalleled quality, resulting on the combination of factors such as the privileged sun exposure, the altitude at which the vineyard is found and the granitic soils that characterize the region.

The winery
Built from scratch and taking advantage of the slope of the ground so that gravity becomes essential part in winemaking process, the winery has the ideal conditions for creating the best quality wines.

It is here that the wines of both quintas are produced combining traditional methods with distinctive and innovative technology. 

Winemaking and ageing
The grapes are harvested by hand into small 20 kg boxes to avoid overheating and/or crushing. They are meticulously evaluated on a sorting table, transported to the destemmer/crusher and, by gravity, end up in the refrigerator fermentation tanks where they remain for 7 to 9 days. Reassembly and temperature controle are carried out manually and also automatically, thanks to the existing technology.

The wine is stored in French oak barrels from some of the most respected cooperage brands in the world – Taransaud, L’Adour, Seguin Moreau, Baron.. At this stage, the wine breathes through the imperceptible cervices of the staves and develops admirable, rich and complex aromas.

The temperature of the winery, and the ideal time of permanence – which ranges from 6 to 24 months – are carefully monitored with a view to a perfect balance of aromas and complexity that they intend to achieve.
