Parajes represents the region wine and its first vintage appears in 2016. In its preparation grapes from different parts of Bierzo have been used, each plot has been elaborated separately.
It presents aromas of red fruits, violets, spices and smoked notes. In the mouth it is fresh, with pleasant tannins, balanced and elegant.

Soil In the 2020 vintage, grapes from 9 villages of El Bierzo were used: Valtuille, Arganza, Toral, Camponaraya, Villafranca, Valdecañada, San Clemente, San Juan de Paluezas and San Pedro de Olleros (740 m. of altitude). The producer elaborate each plot separately, with a total of 42 vinifications. Within these places plots at El Rapolao, Villegas, Pico Ferreira and Sufreiral are notable. In the vinifications the white grape of each plot is present, as it appears in the vineyard.
Area ot the plot: 42 plots, totaling 6,4 hectares of
vineyards.
Soil: clay, slate, sand and limestone.
Vineyards altitude: between 460 and 750 meters.
Age of vineyards: more than 100 years.
Winemaking The grapes were collected manually, each plot was fermented independently, with the final mixture having around 20% of whole grape. The harvest lasted 18 days.
The grapes are gently stepped on, so that a part of the grapes remains whole in the fermentation, which is carried out spontaneously by the yeast itself without adding any other. The macerations occur between 17 and 60 days of contact.
After pressing, the wine is introduced separately in barrels, except for a part, corresponding to the Valtuille vineyards, which ages in a 5.000 litre foudre. After one year, the barrels are emptied and the different plots are assembled.
Aging 12 months in barrels of 225, 400, 500 and 600 liters, and a 5.000 litre foudre with the Valtuille vineyards.

César Marquez has his roots in the Bierzo region. He decided to start his promising career as a vigneron after working for seven years alongside his uncle, Raúl Perz, in the Castro Ventosa winery to show his Burgundian identity and style, producing high-quality wines. He carries the knowledge of a family tradition in wine production and wine culture. His heritage is respect for the relationship between nature and vine and viticulture and oenology. Its wines reflect the identity of the Bierzo, particularly of Valtuille. Most vineyards are old vines planted in soils dominated by slate and clay. Their wines ferment spontaneously in wooden vats.
