Grapes Castelão (100%)
Soil An area of 0.34 hectares located in Lavre, planted 18 years ago. The Mediterranean climate provides a wide temperature range, and the soils—transitioning from clay to sand in this part of the Alentejo—allow, despite low yields, the development of grapes with intense aromatic expression and excellent freshness retention.
Winemaking The hand-selected grape clusters are destemmed and gently transferred by gravity to a small open fermenter, where fermentation takes place at controlled temperatures for 7 to 10 days. After alcoholic fermentation, malolactic fermentation follows, lasting approximately 15 days. Once pressed, the wine is transferred to French oak barrels.
Aging 10 months in French oak barrels of Tronçais.

The Estate
Since 1919 this estate has known the Pinto Gouveia family.

With almost 100 years of history, this is a property that is directed to the production of cereals and cork. From the 1990s onwards, the past came to have a new irrigated area that allowed the installation of new cereal crops and later vines and fig trees of India.

Also, Monte Selvagem, an Animal Park, installed in a cork oak forest, was born within the Herdade. It shows to all visitors that it is possible to live in harmony with nature.

Fountains and dams, cork oaks, pines, willows, linden trees, corn and wheat grasses, thistles, chamomiles, rosemary, bees, sun, summer heat and winter cold are more than enough reasons for what came next.

The source
The grandfather of the current owners left his mark at the source in the year 1944. The source already existed and was remodelled on that date.

The source is the soul of our Gin. The innumerable meetings that took place there, the most isolated moments of inspiration and the energy that the local site conveys make this source the "Mother" of our project.

Having made the proper water, chemical and sensory analyzes, this was our first ingredient.

No, it is not ordinary water... It is water that sprouts in this place for more than 100 years...

In its construction, a mine was erected that brought the water to the source, this mine fell over the years, but the source never stopped running. It is water filtered by the earth, pure and limpid, but with a slight and gentle touch of the earth... This is what sets it apart!

When one drinks this water one feels the "purity of its origin".
