Soil | Produced in Portalegre to the north east of the Alentejo on the granite foothills of the São Mamede mountains, where cooler temperatures, along with many old vines, gives complexity and freshness. Vineyards over 100 years old and 665 metres above sea level. |
Winemaking | Manual selection and total destemming before crushing, 48 hours of cold decanting. 85% of the blend fermented and aged in stainless steel and the remaining 15% in new French oak barrels (500 litres) for 8 months. |
