It has a strong personality, dry, iodised and with a sharp acidity. When you combine experience with innocence, wrinkles with childishness and non-intervention with the most refined technique. This is Solera, which has the refreshment of a wine of the year but retains all the charisma of things done slowly.

Soil | Vineyards are located in Lavre at 15 years old. The Mediterranean climate provides a high-temperature range and the poor soils of the transition from clay to sand in this extreme of the Alentejo allow that, despite the very low productivity, conditions are created for maturation of great aromatic expression and freshness retention. |
Winemaking | The bunches selected in the vineyard are destemmed and transported by gravity to a small press where they are bled by 40% (bled into a fermentation vat) and fermented at a controlled temperature for 18 days. After the alcoholic fermentation, the malolactic fermentation is followed by monthly battonage throughout the Solera period. |

Since 1919 this estate has known the Pinto Gouveia family. With almost 100 years of history, this is a property that is directed to the production of cereals and cork. From the 1990s onwards, the past came to have a new irrigated area that allowed the installation of new cereal crops and later vines and fig trees of India.
Also, Monte Selvagem, an Animal Park, installed in a cork oak forest, was born within the Herdade. It shows to all visitors that it is possible to live in harmony with nature.
Fountains and dams, cork oaks, pines, willows, linden trees, corn and wheat grasses, thistles, chamomiles, rosemary, bees, sun, summer heat, and winter cold are more than enough reasons for what came next.
The Water Fountain
The grandfather of the current owners left his mark at the fountain in the year 1944. The fountain already existed and was remodeled on that date.
The fountain is the soul of Monte da Bica Gin. The innumerable meetings that took place there, the most isolated moments of inspiration, and the energy that the local site conveys make this fountain the "Mother" of this project.
Having made the proper water, chemical, and sensory analyzes, this was the first ingredient.
No, it is not ordinary water... It is water that sprouts in this place for more than 100 years.
In its construction, a mine, that brought the water to the source, was erected. This mine fell over the years, but the water never stopped running. It is water filtered by the earth, pure and limpid, but with a slight and gentle touch of the earth... This is what sets it apart!
When you drink this water you feel the "purity of its origin".
