Regenerative Agriculture
Herdade do Cebolal has 85 hectares which 20 hectares are vines and 65 hectares is forest. They are working on estate regeneration due seven hectares were converted in syntropic agriculture. Over the last few years, they have applied environmentally friendly philosophy processes. They are preserving the habitat, ecosystems, biodiversity, and community health.
Syntrophic Agriculture
Syntropic agriculture or Agroforestry consists of a theoretical and practical set of a model of agriculture developed by Ernst Götsch, in which agricultural practices reflect natural processes, both in their form and in their function and dynamics.
We are talking about regeneration through productive agricultural areas that lead to the independence of raw materials and irrigation to balance the ecosystems as soil formation, microclimate regulation and facilitation of the water cycle. In other words, agricultural planting and the regeneration of ecosystems are concomitant.
Syntropic agriculture is based on the concept of syntropy - the opposite of entropy - which means the organisation, integration, balance and preservation of energy in the environment. Its inspiration is the virgin ecosystems natural dynamics that have not suffered human interference and sustainable management.
Vineyards and Viticulture
They have been planting indigenous grape varieties and international varieties over the last few decades, the oldest being around 80 years old. Viticultural practices have been changing over the years due to the environmental issues emerging from global warming. Because of this, they have valued the synergies between cultures to create a protective symbiosis, which translates into agriculture with low chemical intervention. With this viticulture practises, they are trying to enrich the soil and manage water resources in a more balanced and environmentally friendly way. Through the valorisation of the terroir, they want to guarantee the authenticity and character of their grape varieties.
The climate of mild temperatures, with sunny days and cool nights, influences the maturation of the grapes and, the soil rich in schist and limestone gives it unique characteristics. The work in the vineyard has been very careful with minimal irrigation, seeking to obtain quality grapes. The defoliation in the bunches area for better south/west exposure to the sun ensures adequate ripening.
The Winery
The winery was remodelled in 2013 by the 4th and 5th generations, preserving traditional techniques.
The mission of Herdade do Cebolal is to produce wines with low sulphites and low alcohol content and minimal chemical intervention to preserve health and demonstrate the authenticity of the wine. The winery is considered a complement to the production due to the basis of everything is in viticulture.
