Margarida Cabaço, Chef at the S. Rosas Restaurant in Estremoz, Alentejo region, decided in 2001 to explore the combination of gastronomy and wine and create her project, Monte dos Cabaços.

Currently, already in the company of the younger generation of the family and alongside oenologist Susana Estéban, he is dedicated to the production of wines.
The exceptional quality of the terroir has allowed for a refined selection of different varieties. The grapes are still tasted in the vineyard, harvested manually and chosen according to high quality standards.
Fermentation is carried out in presses with foot treading and in stainless steel vats with temperature control, followed by a long stage in the bottle.
The batches are kept in French oak barrels, aged between 6 and 18 months and give rise to Monte dos Cabaços Reserve and Margarida Special Editions.
Garnet colour, aromas of black fruits, plum, sour cherry, mint and tobacco. In the mouth it is intense, with balanced acidity, mineral and pleasant with some persistence.
